Weekly Dinner Plan: 4 Easy Family Dinners Using One Pot Roast
If you’re looking for a simple way to get homemade dinners on the table without spending every evening in the kitchen, this week’s meal plan is for you.

The star of the week is a Greek Lemon Herb Pot Roast that gets transformed into multiple meals. One evening it’s served as a comforting roast dinner with crispy potatoes. A few days later, the leftovers become crispy beef gyros that feel like a completely different meal. Along the way, we’ll also make quick Basil Beef Rice Bowls and finish the week with creamy Skillet Mac and Cheese served alongside grilled chicken and fresh fennel slaw.
One of my favorite things about this meal plan is how many ingredients pull double duty. The fennel slaw shows up in multiple meals, the Charred Lemon Crème Fraîche Dressing gets used throughout the week, and the leftover roast becomes an easy second dinner with almost no extra work.
