Air Fryer Sweet Potato Fries

Crispy edged sweet potato fries made in the air fryer with olive oil, salt, and a touch of tapioca starch.

- 3 medium sweet potatoes or 2 large
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1 tablespoon tapioca starch
Peel and cut the sweet potatoes into thin fries.
Place them in a large bowl and toss with 2 tbsp olive oil, 1 tsp salt, and 1 tbsp tapioca starch.
Preheat the air fryer to 385°F (196°C).
Arrange the fries in a single layer in the air fryer basket.
Air fry in 2 batches for 17 to 18 minutes per batch.
Toss or flip the fries halfway through cooking.
Serve immediately.
- Make sure not to overcrowd the air fryer. I would consider frying in batches to get the BEST results
