Crispy edged sweet potato fries made in the air fryer with olive oil, salt, and a touch of tapioca starch.

Ingredients

  • 3 medium sweet potatoes or 2 large
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 tablespoon tapioca starch

Instructions

  • Peel and cut the sweet potatoes into thin fries.
  • Place them in a large bowl and toss with 2 tbsp olive oil, 1 tsp salt, and 1 tbsp tapioca starch.
  • Preheat the air fryer to 385°F (196°C).
  • Arrange the fries in a single layer in the air fryer basket.
  • Air fry in 2 batches for 17 to 18 minutes per batch.
  • Toss or flip the fries halfway through cooking.
  • Serve immediately.

Notes

  • Make sure not to overcrowd the air fryer. I would consider frying in batches to get the BEST results
