Air Fryer Sweet Potato Fries
These air fryer sweet potato fries are crispy on the outside, tender on the inside, and made with just a handful of simple ingredients.

Sweet potato fries are one of those side dishes I find myself making over and over again. They’re easy, inexpensive, and pair well with everything from burgers to sandwiches and simple weeknight dinners. While they never get quite as crispy as a regular potato fry, the air fryer does a great job of creating crispy edges while keeping the centers soft and fluffy.
One little trick I love is adding a bit of tapioca starch before cooking. It helps the fries develop a better texture and gives them a little extra crispness without much effort.
These fries are simple, flavorful, and require very little hands on time. The air fryer keeps things easy and prevents the kitchen from heating up. They’re also a great way to add a vegetable side dish to dinner that everyone in my family will happily eat.

- Sweet potatoes – The star of the recipe. Try to cut them into evenly sized fries so they cook at the same rate.
- Olive oil – Helps the fries brown and crisp in the air fryer.
- Salt – Simple seasoning is all these really need.
- Tapioca starch – My favorite trick for helping sweet potato fries crisp up a little more in the air fryer.
How I Make It
I start by peeling and slicing the sweet potatoes into thin fries. Then I toss them with olive oil, salt, and tapioca starch until everything is evenly coated.
Next, I arrange the fries in the air fryer basket, making sure not to overcrowd them. This is one of the biggest keys to getting good results. Cooking them in batches gives the fries more room to crisp up instead of steaming.
Halfway through cooking, I give them a toss and continue cooking until they’re golden around the edges and tender in the center.
Tips
- Cut the fries as evenly as possible for consistent cooking.
- Don’t skip the tapioca starch. It helps improve the texture.
- Avoid overcrowding the basket. Cook in batches for the best results.
- Flip or toss the fries halfway through cooking.
- For crispier fries, add an extra minute or two of cook time.
- Serve immediately while they’re hot and enjoy 🙂

Method
- Peel and cut the sweet potatoes into thin fries.
- Place them in a large bowl and toss with 2 tbsp olive oil, 1 tsp salt, and 1 tbsp tapioca starch.
- Preheat the air fryer to 385°F (196°C).
- Arrange the fries in a single layer in the air fryer basket.
- Air fry in 2 batches for 17 to 18 minutes per batch.
- Toss or flip the fries halfway through cooking.
- Serve immediately.
