Ingredients

  • 1 batch simple braised beef (https://christinesnotebook.com/simple-braised-beef/)
  • 4 to 5 sweet potatoes
  • Olive oil for roasting
  • 1 small head cabbage or 1 bag coleslaw mix
  • 2 whole carrots shredded
  • 1 bunch kale chopped
  • Jalapeño ranch for serving (https://christinesnotebook.com/creamy-jalapeno-ranch-with-fresh-herbs/)

Instructions

  • Prepare a batch of my simple braised beef recipe and keep warm.
  • Preheat the oven to 425°F (220°C).
  • Place the sweet potatoes on a baking sheet and roast for about 45 minutes or until very soft.
  • Toss the cabbage and kale with enough jalapeño ranch to lightly coat.
  • Assemble bowls with roasted sweet potatoes, braised beef, slaw, and extra jalapeño ranch.
