Ingredients
160g(⅔ cup) warm water
120g(½ cup) active sourdough starter
80g(⅓ cup) Greek yogurt
60g(¼ cup) olive oil
8g(1 tsp) salt
10g(2 tsp) honey (optional)
300g(2 to 2½ cups) freshly milled floursuch as khorasan or hard red wheat. I used khorasan for this recipe. If using all purpose flour, you will likely need extra flour, add 1 tbsp at a time until dough is workable but still soft and pliable.
Instructions
In a large bowl, mix together the water and sourdough starter. Add the yogurt, olive oil, salt, and honey, and stir until combined. Add the flour and mix until a soft dough forms.
Let the dough rest for 20 to 30 minutes, then knead on a floured surface until smooth and elastic.
Shape into a ball and transfer to a bowl coated with olive oil. Cover with plastic or beeswax wrap and let it sit at room temperature for several hours, until puffy and risen.
Divide the dough into 8 pieces. On a floured surface, roll each into a circle about 8 inches wide.
Heat a skillet over medium-high heat. Cook for 1 to 2 minutes until puffed and bubbly, then flip and cook the other side until lightly golden. Serve warm.
