Sourdough Naan (Same-Day, Soft & Fluffy)

Ingredients

  • 160 g (⅔ cup) warm water
  • 120 g (½ cup) active sourdough starter
  • 80 g (⅓ cup) Greek yogurt
  • 60 g (¼ cup) olive oil
  • 8 g (1 tsp) salt
  • 10 g (2 tsp) honey (optional)
  • 300 g (2 to 2½ cups) freshly milled flour such as khorasan or hard red wheat. I used khorasan for this recipe. If using all purpose flour, you will likely need extra flour, add 1 tbsp at a time until dough is workable but still soft and pliable.

Instructions

  • In a large bowl, mix together the water and sourdough starter. Add the yogurt, olive oil, salt, and honey, and stir until combined. Add the flour and mix until a soft dough forms.
  • Let the dough rest for 20 to 30 minutes, then knead on a floured surface until smooth and elastic.
  • Shape into a ball and transfer to a bowl coated with olive oil. Cover with plastic or beeswax wrap and let it sit at room temperature for several hours, until puffy and risen.
  • Divide the dough into 8 pieces. On a floured surface, roll each into a circle about 8 inches wide.
  • Heat a skillet over medium-high heat. Cook for 1 to 2 minutes until puffed and bubbly, then flip and cook the other side until lightly golden. Serve warm.

Notes

  • Dough should be soft and slightly sticky for best texture
  • If it’s hard to work with, chill for 30 minutes before rolling
  • Best served fresh, but reheats well in a hot pan
