There are certain days where I end up in the kitchen way longer than I planned…but in the best way. This sourdough naan came out of one of those full kitchen reset days where I was baking, prepping, and trying to get ahead for the week.

I didn’t originally plan on making naan, but I had some bubbly sourdough starter sitting on the counter and wanted something simple to go with dinner that night. I threw this dough together in the morning, let it sit on the counter while I went about my day, and by dinnertime we had the softest, most flavorful naan to go with an easy chicken and hummus plate.

This recipe feels extra special, but it’s actually really low effort. And once you make it once, you’ll realize how flexible it is.

Why I Love It

This is the kind of recipe that fits into real life. I can mix it in the morning, forget about it for a while, and come back to a dough that’s ready to cook. It doesn’t require perfect timing or complicated steps, which is exactly what I need on busy days.

I also love that it uses sourdough starter but doesn’t feel complicated. You still get that depth of flavor and the added benefits of fermentation, but it’s much more forgiving than a traditional sourdough loaf.

And honestly, there’s nothing better than pulling warm naan off a hot pan and serving it right away. My kids will stand at the counter grabbing pieces as fast as I can make them.

Main Ingredients & Swaps

  • Sourdough starter – Active and bubbly works best, but it doesn’t have to be perfect
  • Flour – I use freshly milled flour, but all-purpose works great or a mix of both
  • Greek yogurt – Adds softness and that classic naan flavor
  • Olive oil – Keeps the dough tender and rich and adds a really nice flavor, I prefer extra virgin here
  • Honey (optional) – Adds a slight sweetness and helps with fermentation
  • Salt – I prefer a himalayan pink salt here for extra minerals

Tips Before You Start

  • This is a softer, slightly sticky dough. That’s what gives you that fluffy texture, so don’t be tempted to over-flour it.
  • If your kitchen is warm, this may rise faster than you expect.
  • A hot pan is key. You want that quick puff and light charring.
  • If the dough feels hard to work with, letting it chill in the fridge for 30 minutes can help.

How I Make It

Mix the sourdough starter, water, yogurt, oil, salt, and honey in a bowl. Add the flour and stir until a soft, slightly sticky dough forms. Let it rest for a bit, then knead until smooth and elastic.

Cover the dough and let it sit at room temperature for several hours, until it looks puffy and has risen.

Once the dough has had a chance to rest, divide the dough into 8 even balls and roll each piece into thin rounds.

Cook each piece in a very hot pan until it puffs and gets light golden spots. Flip, cook the other side, and serve warm.

Sourdough Naan (Same-Day, Soft & Fluffy)

Ingredients
  

  • 160 g (â…” cup) warm water
  • 120 g (½ cup) active sourdough starter
  • 80 g (â…“ cup) Greek yogurt
  • 60 g (¼ cup) olive oil
  • 8 g (1 tsp) salt
  • 10 g (2 tsp) honey (optional)
  • 300 g (2 to 2½ cups) freshly milled flour such as khorasan or hard red wheat. I used khorasan for this recipe. If using all purpose flour, you will likely need extra flour, add 1 tbsp at a time until dough is workable but still soft and pliable.

  • Dough should be soft and slightly sticky for best texture
  • If it’s hard to work with, chill for 30 minutes before rolling
  • Best served fresh, but reheats well in a hot pan

Method
 

  1. In a large bowl, mix together the water and sourdough starter. Add the yogurt, olive oil, salt, and honey, and stir until combined. Add the flour and mix until a soft dough forms.
  2. Let the dough rest for 20 to 30 minutes, then knead on a floured surface until smooth and elastic.
  3. Shape into a ball and transfer to a bowl coated with olive oil. Cover with plastic or beeswax wrap and let it sit at room temperature for several hours, until puffy and risen.
  4. Divide the dough into 8 pieces. On a floured surface, roll each into a circle about 8 inches wide.
  5. Heat a skillet over medium-high heat. Cook for 1 to 2 minutes until puffed and bubbly, then flip and cook the other side until lightly golden. Serve warm.
